excellent layered brownies


My Sister’s Excellent Layered Brownies

My sister gave me this recipe for excellent layered brownies several years ago and is always a big hit wherever I take them.The groups love them.  Although it is probably not a Middle Eastern Dish, what is not to like about chocolate!  Everyone loves chocolate and/or these fabulous excellent layered brownies!


1 cup softened butter

2 cups sugar

4 eggs

2 tsp vanilla

6 Tbl cocoa powder

1 cup flour

1/2 tsp salt

2 tsp instant coffee (optional)

2 cups semi-sweet chocolate chips

1 cup smooth or crunchy peanut butter

3 cups crisp rice cereal

1 jar marshmallow cream

Mix the softened butter and sugar together until light and fluffy.  Add in the eggs one at a time, mixing after each egg, followed by the vanilla.  Stir in the cocoa, flour, salt, and instant coffee, if using.  Bake in a greased 9″x 13″ baking pan at 350 degrees for 25 minutes.  Test the middle with a toothpick until it comes out clean.  Take out of the oven and cool.

Spread the jar of marshmallow cream over the cooled excellent brownies.

In a medium saucepan, melt the chocolate chips and peanut butter over low heat until smooth.  Take off the flame and add the crisp rice cereal.  Carefully stir until all of the cereal is coated.  Spread over the first 2 layers of the excellent layered brownies.  Store in the refrigerator for a couple of hours to set.  Cut these excellent brownies into squares and enjoy!
