This apple cake

is a great light dessert, not just for fall, but any time of year.  It’s small in size and makeApple Cakes a perfect snack cake.  Enjoy it with tea, coffee, or your favorite beverage.  Lots of fresh apples makes this apple cake extra moist and fresh.  You can use any apple that holds up in baking such as Golden Delicious or Mackintosh.  I used Granny Smith since they are more tart than the others.  Use any of these or a combination.


Middle Eastern Dishes Apple Cake


  1. 2 eggs
  2. 2 cups sugar
  3. 1 tsp vanilla
  4. 1/2 cup canola or vegetable oil
  5. 2 cups all-purpose flour
  6. 2 tsp baking soda
  7. 2 tsp cinnamon
  8. 1 tsp nutmeg
  9. 1/2 tsp clove
  10. 1/2 tsp salt
  11. 1 cup chopped pecans or walnuts (optional)
  12. 1 cups finely chopped and peeled apples


  1. Preheat oven to 350 degrees. Spray a 9"round cake pan with non-stick cooking spray. Mix together the eggs, sugar and vanilla in a small mixing bowl. In a larger bowl, whisk together the flour, baking soda, cinnamon, nutmeg, clove and salt. Stir into the egg mixture. The batter will be very stiff. Fold in the apples and pecans or walnuts, if including. Spoon the batter into the cake pan. Bake for 25 to 30 minutes, or until a cake tester comes out clean. Serve with whipped cream, or a dusting of powdered sugar, if desired.
