Black Rice Pilaf

The Idea For This came to me during a recent trip to Trader Joe’s.  That was where I saw the black rice.  I looked at it and I thought about what I could do with this.  And of course – black rice pilaf came to mind.  So I brought it home.  I started cooking like any ordinary  pilaf.  When I poured the chicken stock in the pan with the black rice, it turned everything black.  I have to admit, it looked a little odd at first, but I continued and discovered black rice pilaf makes a very tasty alternative to white rice pilaf.  I hope you try it and enjoy it as much as we did.

1 cup black rice

1/3 cup fine noodles

3 Tbs olive oil

1 small shallot, finely chopped

2 cups chicken broth

Salt and freshly ground pepper

In a medium sauce pan, saute the shallots in the olive oil, until tender – about 3 – 5 minutes.  Add the noodles and cook until brown.  This happens quickly, so keep a close eye on it so the noodles don’t burn.  Add the rice.  Cook and stir for a minute or so until slightly toasted.  Add the chicken broth, salt and pepper.  Bring to a boil.  Lower heat, cover and simmer for 30 minutes, or until the rice is tender.
