Lahmajoun Armenian Pizza

Is another dish my mom made when my sister and I were little. Due to the time it took to make, it was a very special treat when we had it. Depending on how big the Lahmajoun Armenian Pizza is, they can be an appetizer, side dish, or a main dish with a green salad.  If time is short to make the crust from scratch, flour tortillas will work well – large tortillas for a main dish, or small tortillas for a side dish.  You could also use flattened canned biscuits to make the Lahmajoun Armenian Pizza into an appetizer.                                                        Lahmajoun Armenian Pizza

Crust Ingredients:

4 cups sifted all-purpose flour:

1 cup lukewarm water

2 pkgs active dry yeast

2 Tbs olive oil

1 tsp salt

1 tsp sugar

Meat (Pizza) Topping

1 lb finely lean ground beef, lamb, or a combination of both

2 cups finely chopped onion

1 small green or red bell pepper, finely chopped

1/4 cup finely chopped fresh parsley  parsley flakes lamajoun pizza

2 cloves garlic, finely chopped

1 6oz can tomato paste

4 roma tomatoes – peeled, seeded and finely chopped

Juice of 1 lemon

Salt and pepper

To make the crust:  Dissolve the yeast and sugar in the water and let sit for a few minutes until the yeast starts to foam.  Combine the remaining ingredients and add the yeast mixture.  Mix the ingredients thoroughly until combined.  Knead on a floured board until smooth and elastic.  Cover and allow to rise in a draft free place for about 2 hours, or until doubled in size.  While the dough is rising, prepare the  topping.

Mix all of the pizza topping ingredients well.

After the dough has risen, divide into 12 round shaped pieces for large (24 for small).  Cover and allow to rest for 10 minutes.  Roll each piece of dough into a circle 12″ in diameter for large, 6″ for small less than 1/8″ thick.  Spread a thin layer of the Lahmajoun Armenian Pizza topping on the rolled out dough, covering the entire surface.

Place the pizzas on a greased baking sheet and bake in a 400 degrees F oven for 10 – 15 minutes.

These pizzas can be baked ahead of time and warmed before serving.   They also freeze well.  Bake per the above and place in a zip top bag with the topping sides facing each other.  Place on a baking sheet at 400 degrees F for about 10 minutes or until warmed through.  For a quick snack, the Lahmajoun Armenian Pizzas can be microwaved for a couple of minutes.
