Vosp pilaf with red lentils
This is another comfort dish my mom made for us when we were little Girls. The red lentils make the vosp a creamy pilaf. The red lentils cooked with the rice made for a warm and comforting side dish. Especially on cold winter nights. Vosp is a variation of pilaf with red lentils that goes with many main dishes as any pilaf does. The red lentils for the vosp can be found in most grocery stores where the grains are. Below is the recipe and I hope you try it and enjoy this comforting vosp pilaf as I do.
1 cup red lentils
1/2 cup rice
3 1/2 cups water or chicken stock
2 chicken bouillon cubes, if using water
1 tsp salt
1/2 tsp fresh ground black pepper
1 cup finely chopped onion
1/4 cup butter
Rinse the lentils well, put in a medium sauce pan with the water and bouillon cubes, or chicken stock and salt. Cook over medium heat for about 15 minutes. Add the rice and lower the heat to simmer. Cover and cook for about 20 minutes or until all of the water is absorbed.
Meanwhile, in a small sauce pan, saute the onions in the butter. Cook for about 8 – 10 minutes or until the onions are soft. Add the pepper. Mix with the rice and red lentils and serve warm. Vosp pilaf is a nice variation of the typical rice pilaf.
