Multigrain Pilaf

Multigrain Pilaf with 3 Grains

is a variation of pilaf that is high in fiber containing barley, brown rice and bulgur. It is a good side dish that goes well with beef or chicken.


2 tsp olive oil

2 tsp butter

2 finely sliced shallots

1 clove garlic, finely minced

2 1/2 cups water

1 1/2 cups chicken broth

1/2 cup uncooked pearl barley

1/2 cup brown rice blend, or brown rice

1/4 cup uncooked bulgur

1/4 cup chopped fresh flat leaf parsley

1 tsp ground coriander

1 tsp salt

1/4 tsp freshly ground black pepper


In a sauce pan over medium heat, saute the sliced shallots in the butter in oil until soft, about 2 -3 minutes.  Add the minced garlic and saute another minute or so.  Add the water, chicken broth, barley, brown rice, and ground coriander.  Bring to a boil.  Cover, reduce heat and simmer for 35 minutes.

Stir in the bulgur, cover and simmer for another 10 minutes or until all of the grains are tender.  Remove from heat and stir in the salt, pepper and parsley.  Serve the multigrain pilaf warm.
